Lentil and Sweet Potato Soup Recipe

What a great dinner last night. We found this recipe in the magazine Clean Eating. Today I reheated it and added organic ground lamb with white beans.

Lentil & Sweet Potato Soup

3 tbsp olive oil
1 yellow onion chopped
2 cloves minced garlic
2 tsp fresh minced ginger
1 ½ tsp fresh thyme
1 dried red chile pepper (crumbled)
1 ½ tsp ground cumin
2 tsp ground coriander
½ tsp ground cardamom
pinch of cinnamon
1 tsp sea salt
2 large sweet potatoes, peeled and cut into chunks
1 ½ c cooked lentils (1 can)
4 cups vegetable broth
1 cup coconut milk

Heat oil over medium heat.  Add onion and sauté until golden, about 5-7 min.  Add garlic, spices and salt and stir 2 min.
Add sweet potatoes and broth.  Simmer for 20 min or until potatoes are tender.  Puree mixture and return to pot and stir in coconut milk.
