great balls of dates

ingredients:

20 medjool dates, seeds removed

1/2 cup almond butter

1/4 cup coconut flour

2 tablespoons unsweetened cocoa powder

1 tablespoon cinnamon

finely shredded coconut flakes

directions:

In a food processor, process together all ingredients except for the coconut flakes. The mixture will be very thick. Make sure it's not chunky-should be as smooth as possible.

Using your hands, smash together teaspoon-size portions of the mixture. Roll into small balls, and then roll in the shredded coconut flakes to coat.

I made this recipe exact - I was able to squeeze into a ball - but the coconut did not adhere to the ball. I tried adding more dates to see if it would make it sticky - I tried adding more almond butter - I even added the coconut to the mixture so I wouldn't have to roll in coconut - I made them with out coconut flour and that seemed to work better.
The result had the texture of potting soil I could squeeze together and it would make a ball - but if I pinch or bit into it it would crumble.
